Summer Happenings…

Well, as you can tell by the lack of posting — our summer is in full swing <and school begins in a week — AAAAA!>!  We have been a busy little family!

Button Boy has been to Children’s Hospital and we were blessed to stay in the Ronald McDonald House in downtown Birmingham.  This place is more than we could have ever asked for it to be, and the price was just what we needed!  Please, please, please….next time you are in McDonald’s and you pay in cash…look next to the register or in front of the register for their donation bucket for Ronald McDonald House, and please give your change from you meal.  I will never pass by it again!  …Sorry for the shameless plug, but I know most of you understand the struggles we have had since Button Boy was 5 weeks old.

Back to the Boy, he had his EGD….it showed that the EE was inflamed again and seems to be worse.  We are on another steroid…this time an oral mist that is used for asthma patients, but instead of inhaling it — he swallows it.  We have been using it for a little over a week.  I am waiting for the “Prednisone-Syndrome” to kick in….and I am not looking forward to it.

 Girly Girl and Button Boy have both experienced their first swimming lessons!  They both stressed about them before they began…Girly Girl decided she didn’t like the deep end and worried about it all week…until the last day, then she decided it wasn’t too bad!  Button Boy just cried everyday before lessons and after lessons….he did fine during lessons once he got in.  By the last day of his lessons — he JUMPED OFF THE DIVING BOARD!!!!

Girly Girl has been enrolled in gymnastics for the first time, also.  She took for the months of June and July, and will begin again in August and take through at least December.  She has falled in love with it!  I think part of it is that this summer the class has been small and even some days she was the only one in the class.  She began the summer unable to do a cartwheel or handstand…now she can do both!  She loves the uneven bars and is learning to do a pull-over by herself and casts with a back hip circle….tough stuff for a girl that hasn’t had much upper body strength!  She has made us so proud with her excitement and willingness to do the yucky stuff (like 35 sit-ups at the end of every lesson)!!!

Vacation Bible School this year was GREAT FUN!   We hosted Crocodile Dock…and as usual “E” and I played in the Pre-school Snack area….or as we called it “Redz Snack Shack!”  We were so blessed by the children and their excitement for learning to “FEAR NOT!”  We are listening to the cd in the van — which is lots of fun, until the kids begin to imitate “E” and my singing during the week (we tend to scream and sing *way* out of tune!)

I have much, much more to tell you about, but haven’t actually published a post in over a month…so I will continue to work on my other posts, and get them to you as soon as I can!

Saturday — homemade Tonkatsu with rice in our new rice cooker (pictures in the next few days)

Sunday — lunch with the Newton’s & dinner on the way home from church (McDonald’s)

Monday — Swiss Chicken in the Crock Pot, a hold over from last Sunday

Tuesday — Soccer Practice, if it doesn’t rain

Wednesday — church, Girly Girl wants to eat there, I think we may do that

Thursday — Grilled Pork Chops

Friday — Grill Night, Bacon Wrapped Turkey Filets with Sweet & White Potato Spears

Saturday —  Homemade pizzas.  We had so much fun doing these for Valentine’s Day, I believe we will do it again!!!!

Sunday — Mother’s Day…I don’t know yet…I want to go out to lunch, but it may not happen.

** My loving “in-laws” are coming into town in about two weeks for Button Boy’s 6th birthday, so I am busy cleaning house and Girly Girl’s room is on the list this week….I have a lot to do in her room and other parts of the house **

Menu Planning is working very well for me and my family.  I have got to get back to meeting with “E” and becoming better at helping her get her menu planning completed….and she has got to get over to my house for more coffee from my new toy….can’t wait to blog about it!!!  🙂

Menu Plan

I haven’t had the greatest week.  Actually the greatest month or so.  I have been struggling with some health issues — exhaustion, nausea, abdominal pain and so on.  I went to see my surgeon Thursday afternoon, was admitted and had surgery on Friday.  I sat in the bed at Princeton Baptist Hospital on Thursday evening trying to get my mind wrapped around what the upcoming week holds for our family.  My surgery went well, I hate coming out of anethesia, it seems to get more difficult everytime I have to go through it.  Saturday morning before being released, I had some stomach issues, but the result seems to be some tenderness and a sore back, which on top of everything else, I can tolerate.

So, our Menu Plan for the week has some holes in it, just in case I”m not feeling well or I don’t have the strength in the evening.  I also plan on using Girly Girl’s enthusiam for cooking this week!  We’ll see how it goes.

Friday — Surgery day….In Birmingham

Saturday — released from hospital…kiddos at Grandparent’s for the evening….thinking we’ll fend for ourselves!

Sunday — Kiddos still at Grandparent’s, they will bring them home with dinner after their trip to Disney on Ice.  Mojo will be at church most of the day…I will be at home, sleeping.

Monday — Hoping to get back into the groove of things.  The kiddos have soccer games in the evening…So, picnic dinner will be taken to the fields

Tuesday — Barefoot Blogger Croque Monsieur with sauteed green beans w/ bacon

Wednesday — open, hopefully going on a picnic before church, just not sure yet

Thursday — Garlic Chicken with Orzo Noodles

Friday — Grill Out Night….no menu yet, will come Wednesday after the sale papers come out

Saturday — Rachael Ray’s 30 Minute Meals — Zesty Chicken Parm (Page 128)

The first time Girly Girl got to see CATS!  I have seen it so many times that I have really lost count.  My first time seeing it was during a family trip to London when I was in the ninth grade….it was the best production of CATS that I have seen, but that is to be expected since it was in a theatre constructed just for the musical.

I then made egg-free sugar cookies with Girly Girl’s assistance!  …and Pimento Cheese Pinwheels that didn’t get finished for the Church Lunch on the Grounds for our 60th Anniversary!

Sunday — Lunch on the Grounds at church celebrating the church’s 60th Anniversary!!!  Pastor Greg preached….I cried!  It was wonderful!

Monday — Sonshine Soccer Games — 1st of the season!  Quick Dinner — probably Mac-N-Cheese for the kiddos, the parent’s will probably fend for themselves!

Tuesday — Sonshine Soccer Practice — we were rained out last week, so this is actually just the second practice of the season.  Meat & Cheese Roll-ups with fruit to take to the practices for picnic dinner

Wednesday — Church night, they are actually having Lasagna this week, which both Girly Girl & Button Boy  love, so, I will call and make our reservations.

Thursday — Barefoot Blogger Night, this week I will be making Ina’s Chinese Chicken Salad.  I started thawing the chicken on Sunday afternoon, so I cook it before Thursday.  I hope to post pictures by Thursday, because that is when they are due!  I am excited about my first Barefoot Blogger Week!  I will be cooking the next recipe next week, so it is already taken care of!

Friday — Grill Night — maybe we can actually get Brats & Dawgs in this week!

Saturday —  Sonshine Soccer games in the morning.  Baking Toasted Almond Lemon Bars & a special something for Easter Sunday!!!

Overwhelmed

Are you similar to me?  Do you have about 100 different goals that you want to meet, things you want to do, places you want to go, books you want to read, dishes you want to cook, rooms you want to redecorate, junk you want to get rid of?  Oh my!  I have so many of each of those things…and it just seems like I don’t have the stamina to get through everything…., or that there is so much running around in my little brain that I can’t get it all sorted out to get it all done. 

I have never been an organized person.  Never.  Those of you who know me, know exactly how true that is!  When I  was about Girly Girl’s age (she’s 8), I was in Brownie‘s.  I don’t remember much about Brownies, but at the end of one year, I “won” the LOST & LOST Award.!  I LOST everything I carried with me!  I couldn’t keep up with anything…and now it has rubbed off on both of my kiddos….I’m sure there is another post in there somewhere, but I need to stay on *this* subject for right now.

I started my FlyLady goal, and got my sink shined (step #1)…and was excited about moving through my house and getting it clean and organized.  Well, my sink is still shiny, but I didn’t make it through the rest of the house.  Not that I am not planning on doing so, but that is my point!  I have GREAT intentions, but my follow through sucks stinks!

I have been much better about our Menu Planning.  Now, let’s see if I can keep it up!  I am loving cooking!  I am finding that allowing Girly Girl work in the kitchen with me usually means she will eat better.  She wants to eat what she cooks….where, I find if I cook it, I don’t want to eat it.  I enjoy the process of cooking.  It will be interesting during the upcoming weeks to see how some of the new recipes I am finding over the internet turn out!  I am looking forward to cooking some new things!

My newest goal is to get myself out of this overwhelmed feeling I feel like I am struggling with constantly.  I think that may mean going back to FlyLady and re-trying the 31 Days of Beginner BabySteps.  Vickie at Not So SAHM posted about altering the FlyLady BabySteps to fit her and her life in her post here

I plan on “beginning” this routine next week (the week of April 4th).  I know, I know…why not begin this week (the last week of March)?   The only thing I can say is I DON’T FEEL GOOD AND DON’T WANT TO TACKLE IT THIS WEEK!  Sorry for yelling and being blunt.  But, I haven’t been feeling well for over two weeks, and am going to Birmingham on Friday for an endoscope…I will post more about this drama when I have the results.

I will try to post some pictures of my messiness and my Flyin’ Cleanliness!

I ♥ Menu Planning!   

I am having bunches and bunches of fun finding new recipes and getting out some old stand-bys.  This past week, I struggled with feeling well and adding soccer practice on Tuesday evening.  It is amazing, though, how relaxed I am about my evenings when I know what I have planned for my meals during the week!  I am flexible enough that I can not fix a meal that was planned for one day, and move it to another…or leave it to be used the next week….which is what happened the last two weeks with the recipe for 20 Clove Garlic Chicken….I am absolutely determined to get it made this week!  If I have to jump through hoops to have it happen…I want to cook it!!!

I am finding more and more recipes that I am wanting to cook and try.  My sister-in-law has started posting her Menu Plans….and she has found some terrific sounding recipes, and in the upcoming weeks I hope to try them.  KB‘s plan every week includes some baking — you know bread, sweets, and even pasta!  I am gradually trying to add some baking to my week, but haven’t gotten all of the necessary supplies (a whisk for my Kitchen Aid mixer — and a new paddle for it, maybe even a dough hook!).  I also don’t have all the spices that I want or any yeast…but it will gradually come…and hopefully soon, I’ll be baking away!

So, onto my Menu Plan for this week.  It is simple, mainly because I haven’t been feeling 100% and I don’t know what the week will hold in regards to my health.

Friday — Grill Night CANCELLED DUE TO WEATHER & NOT FEELING WELL.  The kiddos stayed with my parents for the evening…Mojo had dry Cheerios (ugh)…and I sipped a Coca-Cola.

Sunday — Leftover ham & mac-n-cheese

**baking plan for Sunday — New Potatoes in Creamy Dill Sauce, homemade chicken salad for the week

Monday — 20 Clove Garlic Chicken, roasted carrots (one of Girly Girl’s new favorites!)

Tuesday — SOCCER PRACTICE PICNIC NIGHT! — sandwiches & potato salad (made Sunday)

Wednesday — Picnic Night before Church — sandwiches with chips & cookies

Thursday — Pork Chop Stuffing Bake

Friday — Grill Night!!!  Brats & Dawgs Night **leftover from last week**

Friday — Grill Out Night, we had Hardin’s steaks, Kelley’s Cheese Biscuits, &  twice baked potatoes

Saturday — We “fended for ourselves”….the kids had Mac -N- Cheese

Sunday — San Marcos Mexican

Monday — Homemade Baked Ziti with Parmesan Cracker recipe from last week

Tuesday — 20 Clove Garlic Chicken <hold over from last week> **we now have at least one soccer practice on Tuesday nights, so this will be a Slow Cooker Day**

Wednesday — **NEW**  Picnic Night  — with having an egg allergy, it is much easier to not reserve a dinner at church, and with the beautiful weather, we have decided to meet with the “D” family for a picnic every Wednesday night for the next few weeks and enjoy the weather and fellowship!

Thursday — Ham Steak & Mac-N-Cheese (a different recipe from two weeks ago, I’m trying to find the perfect recipe to have as *my* signature recipe — making it my own!)

Friday — GRILL NIGHT —  Brats & Dawgs…and hopefully some company!

Lunches — flat bread sandwiches with ham & cheese, and probably some chicken salad as a good twist!

Breakfasts — sausage & egg biscuits for Mojo — biscuits for kiddos!
