“It’s Baaaa—aaack”…me on the other hand….

Button Boy had a EGD this morning at Children’s Hospital in Birmingham.  Eosiniphillic Esophagitis is officially crept back into our lives.  We’ve been off of medication since February 11, 2009.  We are now waiting on the results from the biopsies for Dr. Saeed to decide which direction to go with new meds.

I hope to be back and with “it” in the next few days…including an update about my ailing tummy….gymnastics & swimming lessons…and possibly a few recipes!

After two weeks off from Menu Planning, I couldn’t stand not having a “plan” written out (I did have a plan, but it wasn’t published).  With the 3 day weekend and holiday, I decided I really needed to plan on paper & online. 

Memorial Day has never been a holiday that we really “celebrated” except for getting a day off of  work and having the church members who have passed away in the past year names read during the Sunday service.  This year really won’t be any different, except that we have many friends, past and present, who serve our wonderful country…and I want to personally and publicly let them all know how much I appreciate their service.  It is a sacrifice for them to give their time and sometimes their lives to our lifestyle and beliefs.  As much as I appreciate their service, I appreciate the spouses and children who support them every day.

Now, onto the Menu Plan!

Thursday — Mojo’s Gallbladder surgery….Kiddos stayed with their grandparents, Mojo had peanut butter sandwiches, & I had leftover casserole

Friday — Mojo’s request, ordered pizza

Saturday — Mojo and I fended for ourselves, I wasn’t feeling well

Sunday —  KFC combo — both fried and grilled with 11 herbs & spices!  I love the new grilled chicken!

Monday — Memorial Day — grilling out at my parent’s Pork Baby Back Ribs with “Elba Sauce”, Grilled Potato Salad (Southern Living, June 2009), baked beans

Tuesday — Kiddos sleeping over with grandparents

Wednesday — church for Mojo, recovering from an outpatient procedure for EmmyJMommy

Thursday — Bruschetta ‘N Cheese Chicken and roasted red potatoes

Pasta ala Mrs. Tara

I love naming certain dishes after the person who makes it when I try it and find out I like it!  There is Rhonda’s Rice, “Aunt Ch-narla’s” BBQ Chicken & Yeller Rice…and now, Pasta ala Mrs. Tara

“Pasta ala Mrs. Tara” is in honor of Girly Girl’s first grade teacher (and more importantly the mother of Mary Ellen).  She fixed (that’s cooked, for you Yankees out there!) it for us one Sunday after church and Girly Girl gobbled it up!  She loved it!  So, I got the “secret” ingredients from Mrs. Tara and have altered it a bit to work for us…and allow Girly Girl some kitchen time!

1 box of wheat (egg-free) Penne Pasta

2 cans chunk chicken

2 Tbsp EVOO

5 cloves of garlic, 2 minced — 3 whole

3 cans of diced tomatoes, drained

2 jars of Classico sun-dried tomato alfredo sauce

2 cups shredded mozerella cheese

Cook Penne Pasta according to directions, add 3 whole garlic cloves to the boiling water at the same time pasta is added, just for flavor.  Drain canned chicken & heat in skillet with EVOO & 2 minced garlic cloves.  Roast diced tomatoes in oven (I drizzle a little EVOO over the tomatoes and sprinkle them with oregeno).  After canned chicken is warmed through stir in Classico sauce and drained pasta.  Cover with mozerella cheese and cook in a 375○ oven until cheese is bubbly. 

I use the roasted tomatoes for the left overs, to make sure they are good and moist.  Mojo doesn’t like for his pasta to get dry….

**NOTE — the Classico sun-dried tomato sauce is NOT egg-free!  Button Boy is not allowed to eat it, but I did have some Mac-n-cheese that was egg-free that he was able to enjoy!

Believe it or not, I don’t have my Menu Plan completed for this week.  This week has some “may-be”s to it….I was expecting Sonshine Soccer on Monday, Tuesday and Saturday….but it is only Tuesday and Saturday….I was expecting Mojo’s parents on Thursday, but they aren’t coming until Friday….Button Boy’s 6th birthday is Saturday, and we are cooking out at my parent’s house with family and Button Boy’s friend (I’m sure I’ll have pictures to post sometime next week)….so, you can see there have been plenty of changes in the Menu Planning…so, I am going to for-go posting to Laura’s Menu Planning Monday round-up this week, but will probably post some of our food over the week.  I do plan on doing some cooking for my in-laws and during the week.  Button Boy is excited because I will be *ATTEMPTING* B.O.B. cake pops for his birthday instead of a cake!  We have to go egg-free which means no store bought cakes for us anymore!

Thursday Girly Girl and I made some terrific mashed potatoes, but I have to tell you about the incredibly moist and crunchy chicken that we made for the main dish!!!  It was, in the words of Rachael Ray, YUMMMM-O!



Set oven to 350°F.
Butter an 11 x 7-inch pan (if using more than 4 breasts use a larger pan).
In a bowl, combine melted butter with fresh minced garlic, garlic powder and salt.
In another bowl, combine breadcrumbs with 1/2 cup finely grated cheddar cheese, Parmesan cheese and coarse ground black pepper.
Dip chicken in butter mixture; then in crumb mixture.
Place in prepared pan and bake uncovered for 30-35 minutes (placing the chicken on a rack in a pan will produce an extra crispy crust).
**NOTE** for moist tender breasts cooking time should take no more than at the most 35 minutes unless they are very large then you might have to add on a couple extra minutes).
Top with shredded cheddar or mozzarella the last 5 minutes of cooking.
**Note** the original directions stated to bake covered for half of the cooking time, I have since changed it to bake uncovered the full time for a crispier coating.

Doin’ the Mashed Potato!

I have made a wonderful dinner Thursday evening.  I had some help from Girly Girl, too!  She has decided she wants to be a chef…well, that is what she wants to be this week.

I used a Kraft Foods recipe for mashed potatoes for the side to our dinner — and yes, we only had one side…no greens.  I’m wearin’ the “Bad Mommy Crown”…oh well.

2 1/2 lb. potatoes, peeled, quartered  (I used small red potatoes and didn’t peel them)

4 garlic cloves, minced

8 oz. Philadelphia Cream Cheese Spread (I used a tub)

1 Tbsp. butter (I didn’t measure my butter….way too good to keep it at 1 Tbsp!)

1 tsp. salt

What To Do:

Cook potatoes and garlic in boiling water until potatoes are tender.  Drain.

Beat with an electric mixer on medium speed until smooth.

Add remaining ingredients; beat until well blended.

Sunday — lunch with the Newton’s & dinner on the way home from church (McDonald’s)

Monday — Swiss Chicken in the Crock Pot, a hold over from last Sunday

Tuesday — Soccer Practice, if it doesn’t rain

Wednesday — church, Girly Girl wants to eat there, I think we may do that

Thursday — Grilled Pork Chops

Friday — Grill Night, Bacon Wrapped Turkey Filets with Sweet & White Potato Spears

Saturday —  Homemade pizzas.  We had so much fun doing these for Valentine’s Day, I believe we will do it again!!!!

Sunday — Mother’s Day…I don’t know yet…I want to go out to lunch, but it may not happen.

** My loving “in-laws” are coming into town in about two weeks for Button Boy’s 6th birthday, so I am busy cleaning house and Girly Girl’s room is on the list this week….I have a lot to do in her room and other parts of the house **

Menu Planning is working very well for me and my family.  I have got to get back to meeting with “E” and becoming better at helping her get her menu planning completed….and she has got to get over to my house for more coffee from my new toy….can’t wait to blog about it!!!  🙂
