I love naming certain dishes after the person who makes it when I try it and find out I like it! There is Rhonda’s Rice, “Aunt Ch-narla’s” BBQ Chicken & Yeller Rice…and now, Pasta ala Mrs. Tara!
“Pasta ala Mrs. Tara” is in honor of Girly Girl’s first grade teacher (and more importantly the mother of Mary Ellen). She fixed (that’s cooked, for you Yankees out there!) it for us one Sunday after church and Girly Girl gobbled it up! She loved it! So, I got the “secret” ingredients from Mrs. Tara and have altered it a bit to work for us…and allow Girly Girl some kitchen time!
PASTA ala MRS. TARA
1 box of wheat (egg-free) Penne Pasta
2 cans chunk chicken
2 Tbsp EVOO
5 cloves of garlic, 2 minced — 3 whole
3 cans of diced tomatoes, drained
2 jars of Classico sun-dried tomato alfredo sauce
2 cups shredded mozerella cheese
Cook Penne Pasta according to directions, add 3 whole garlic cloves to the boiling water at the same time pasta is added, just for flavor. Drain canned chicken & heat in skillet with EVOO & 2 minced garlic cloves. Roast diced tomatoes in oven (I drizzle a little EVOO over the tomatoes and sprinkle them with oregeno). After canned chicken is warmed through stir in Classico sauce and drained pasta. Cover with mozerella cheese and cook in a 375○ oven until cheese is bubbly.
I use the roasted tomatoes for the left overs, to make sure they are good and moist. Mojo doesn’t like for his pasta to get dry….
**NOTE — the Classico sun-dried tomato sauce is NOT egg-free! Button Boy is not allowed to eat it, but I did have some Mac-n-cheese that was egg-free that he was able to enjoy!
