During the warm months, which in Alabama are usually mid-March thru Christmas, we grill out alot! It is not only healthy (I don’t always cook the healthiest menus) but tastes wonderful…full of flavor!
This past week I grilled some marinated chicken breasts and roasted some baby carrots (Girly Girl has braces and has found she loves roasted carrots) and cooked some orzo for the first time. I love lemons….so, I decided to add lemon juice to the chicken after it had cooked, and then made the dish look pretty with some sliced lemons…ya know, for the corny pictures that “E” says I am posting to show off my new cooking enjoyment!
I did try a new way of roasting the carrots. I typically drizzle EVOO over the carrots and stir them to cover them with said EVOO –then they roast for about 30 minutes at 350 degrees. With about 10 minutes left, I took about 1/4 cup of light brown sugar and sprinkled over the carrots to give them a sweet taste…Girly Girl loved them! That was the goal!
