Recipe Time!

There are not too many recipes that I come across…think about making…then actually take the time to make…., but I found one that really sounded great, and met the requirement that we have had lately of NO EGGS!  So, I made sure we had ALL the ingredients (all 6!!)….and got to cookin’!

My family LOVED THIS RECIPE!!!  It was (in the words of Mrs. Robinson) “easy peasy lemon squeezy!”  Girly Girl had declared it my “FAMOUS CHEESY STUFFED BRUSCHETTA CHICKEN”…but really it came from Kraft Food & Family‘s website, which is a terrific source for those of us who are “cooking challenged!”

Bruschetta 'N Cheese-Stuffed Chicken

Makes:
8 servings, one stuffed chicken breast each
What You Need:
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1-1/4 cups  KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1/4 cup chopped fresh basil
1 pkg.  (6 oz.) STOVE TOP Stuffing Mix for Chicken
8 small boneless skinless chicken breast halves (2 lb.)
1/3 cup  KRAFT Roasted Red Pepper Italian with Parmesan Dressing
Make It:
PREHEAT oven to 350°F. Combine tomatoes, 1/2 cup of the cheese, the basil and dry stuffing mix; stir just until moistened.

PLACE 2 chicken breast halves in large freezer-weight resealable plastic bag. Pound chicken with meat mallet or side of heavy can until chicken is 1/4 inch thick. Repeat with remaining chicken, adding two at a time to bag. Place chicken, top-sides down, on cutting board; spread evenly with stuffing mixture. Starting at one of the narrow ends, tightly roll up chicken. Place, seam-sides down, in 13×9-inch baking dish. Drizzle evenly with dressing.

BAKE 40 min. Sprinkle with remaining 3/4 cup cheese. Bake an additional 5 min. or until chicken is cooked through (165°F) and cheese is melted.

Our Family @ King Neptunes

Our family has favorite restaurants.  We, obviously, love food!  Mojo really initially agrees to go to the beach because of two things, Miss Janie’s homemade gumbo…and KING NEPTUNE’S!  This year, when we went to King Neptune’s, we were real nerdy…we took the Nikon D300 in and took pictures!  We *had* to!!  It has the best butterfly shrimp known to mankind!  Just check out the pictures and see for yourself…and when you are in Gulf Shores next time…try it out for yourself!

Beach Time With The Family

Every year, my parents rent a house in Gulf Shores and invites my family and my brother’s family to join them for part of the week.  We love to go and spend time with them…last year it worked out to where it was a smaller group than usual, but this year we had 10 adults and 6 children **under the age of 8**!!!  It was a fantastic trip!  The kids were well behaved…and so were the adults!  We spent our mornings in the house, cooking breakfast, enjoying fellowship and playing on the beach…for lunch we kind of went our own ways (sometimes ending up together) and we all came back in the evenings and took turns cooking for the entire group.  Most of the meals were homemade masterpieces…mine was not!  It was football night, and Mojo and I cooked brats, baked beans and chips…nice and easy!
I thought I would share some pictures from our trip over the next few days…the first group of pictures are of my niece, nephew, and my cousin’s two kiddos, but I claim them as nephew & niece, also!

When I was growing up, our family vacations included my cousin Tracy (we lovingly call him T-Bob).  He was my second brother…we always said that he and my brother (JK) share one brain…that they were twins, just birthed by two different mothers…my personal favorite, Tweedle Finicky and Tweedle Grumpy (I’ll let those of you who know them, pick who goes w/ which nickname!).  Well, this was the first trip since we have “grown up”, gotten married, and had kiddos that we have all gone on a trip together…it was just wonderful!!!  We all said on more than one occasion during the 5 days we were together that it felt just like when we were young, just that we were watching our kids do what we did!!!

Lord, I lift my dear sweet husband to you every day but ESPECIALLY today as we celebrate his day of birth.
 
I pray you will give him strength to lead (Joshua 1:7) at home, work, in our community and church.
I pray you will give him a continued passion to manage his home (1 Timothy 3:4)
I pray he will be a wise steward of our finances and all we possess, remembering that ALL things are Yours  and entrusted to us for Your purposes (Matthew 6:19-21; Luke 16:10-13)
I pray he will continue to be quick o hear, slow to speak, and slow to anger (James 1:19)
I pray you will protect him physically, mentally and spiritually (Psalm 28:7-9; Psalm 41; John 17:15; 2 Thessalonians 3:3)
I pray you will fill him with a desire to teach and model a godly lifestyle for our children (Deuteronomy 6; Psalm 78:5-7)
I pray you will instruct him and teach him in the way he should go (Psalm 32:8) the way to lead our family and give him peace in the circumstances and integrity in decisions he must face today (1 Corinthians 14:33 ; Proverbs 33:3)
